So many recipes, so little time...

Hey, everybody.

W here. I haven't been taking a ton of pictures, but I've still been executing all of my favorite recipes since the last post. I've been making all of these things so long that I really don't need to look at any recipes and anybody who's been cooking for a long time knows what I'm talking about. Now, if I were baking something, that would be a different story.

Only pictures for now, no recipes. Sorry.

You'll always notice with the cooking that I do, everything has a minimal amount of ingredients. When you get great product, all you should do is enhance, not screw it all up! In cooking, less is more when composing a dish. Show some restraint, please. You'll see what wonders it does.


Mexican style breakfast taco-Chicken sausage, shallots, garlic, cilantro, lime, tomatoes, sriracha(basically what was on hand and the regular stuff in the pantry at the end of the week)

Chicken and shrimp paella!

Homemade coconut milk mango ice cream-Organic coconut milk, mango puree in the ice cream as well as diced mangoes with a hint of fresh lime. Did I mention that I use our ice cream maker quite a bit during the summer? I also made a dairy version with organic milk, heavy cream, sugar, mango puree, mangoes and lime.


Organic roast. Tasty roast. Perfectly cooked roast! Look closely. THIS is how it should be cooked. Medium! Very juicy and delicious. Not turned into a piece of leather, please. I coated the outside of the roast with salt, pepper, rosemary from our yard, dried thyme, garlic powder and onion powder.

Beet salad-Steamed beets, Italian Parsley, sea salt, white pepper, olive oil, balsamic vinegar.

Can you guess what this is? Today was Easter.

Speaking of Easter, I've always hated the way almost anybody made hard boiled eggs. You know....the yolks were grey on the outside. Overcooked! Look below. Golden yolks on the inside and out. Happiness all around.

This was a component of a cinnamon bread loaf that J made this morning. Lemon and orange zest.

J wanted orange chicken the other day, so here it is

Thai style chicken over coconut rice-Chicken breast, sriracha, mint, short grain rice, coconut milk, canola oil, vinegar, sea salt, white pepper

Caldo verde-Azores style. I do not like my caldo verde pureed like they do in Spain. Chunky and rustic, please.

Homemade organic heirloom tomato sauce with basil chiffonade over golden-browned polenta slices. Remember to cook the polenta in hot oil over medium heat for a while on both sides to achieve the perfect crust on the outside to give it texture contrast.
